Scales used to be my least favorite tool, now I won't cut without one
I spent 15 years eyeballing every rib rack and pork shoulder, just going off feel and what the boss taught me back in Jersey. Last spring I got a digital scale from a restaurant supply place for 40 bucks and started weighing everything before it hits the saw. Turns out my portion sizes were off by half a pound on some cuts, which adds up fast when you're selling to a deli that counts every slice. Has anyone else made the switch, or are there old-timers out there still trusting the hand test?
Scale changed my whole game too. Mine turned out to be off after I dropped it on the floor, so now I check it with a nickel every couple weeks. Guess the hand test works fine until you're the guy getting yelled at for the weight.
