My grandma said dont knead the dough more than 5 times, and now my loaf came out like a brick
My grandma in Toledo handed me her recipe card last month and wrote in pen at the top, "never knead past 5 folds or it goes tough." I followed that rule exactly for my first solo white loaf and it came out dense and flat, like a hockey puck with a crust. Is 5 folds really enough for a basic white bread, or did she mean something different by a fold?
