A warning for anyone with a greenhouse in a humid area

Last week, my whole collection of African violets in my Raleigh greenhouse got hit by a sudden gray mold outbreak. The humidity spiked to 85% for three days straight after a warm rain, and I didn't catch it fast enough. Has anyone else dealt with a rapid mold problem like this and found a reliable way to lower humidity without shocking the plants?
