The old timer at a KC comp showed me his ash pit and it stuck with me
Back around 2011 I was helping out at a comp in Kansas City and got paired up with a pitmaster named Ray who had been cooking since the 70s. He ran a rusty offset with no gadgets at all, just a hand held thermometer and his palm. I asked him how he knew when the fire was right and he said "son, I dont check the temp, I check the sound" and then he just listened for a second. Sure enough he could tell by the crackle whether he needed to open the vent a hair. I still think about that when I see guys staring at 4 different probes on a $1,200 smoker. Was the old ear and feel thing a real skill most of these old guys had, or was Ray just showing off for a 20 something kid?
