Swore I'd never spritz my pork butt, then a judge in Memphis proved me wrong
I always figured spritzing was just something YouTube guys did for camera shots, so I ran two butts side by side on my offset last Saturday, one dry the whole way and one hit with apple juice every 45 minutes. The dry one stalled hard at 162 for close to two hours while the spritzed one cruised right through, and the bark on the spritzed one came out way better without getting mushy. Told my buddy Dale about it and he just laughed and said he'd been trying to tell me that for years. Anyone else out there go back and forth on spritzing, or am I late to something everybody already knew?
