Dropped $280 on a digital wireless thermometer set and my $12 analog probe still reads better
Bought a 4-probe wireless setup last month because everyone in this hobby says you can't run a brisket without one. First cook it read 15 degrees off my old dial thermometer and I trusted the app instead of my gut. Pulled the packer at 203 and it was dry as a bone because the real temp was closer to 215. Went back to the cheap probe clipped to the grate and my next 3 cooks came out perfect. Anyone else gone back to basics after a gadget let them down?
That's the part nobody wants to hear, that a gadget can actually make you cook worse. You had good instincts and the app talked you out of them, which is the real problem. A probe clipped to the grate tells you the truth about the pit, and a dial in the meat tells you the truth about the meat, and neither one has an opinion or a firmware update. The wireless stuff is handy for a long overnight cook where you want to sleep, I won't argue that. But handy and accurate are two different things, and you just learned that the hard way on a $60 piece of beef. Trust your gut next time, because it was right the whole time.
