Dropped $260 on an offset smoker class in Dallas and the guy just talked about his own brisket the whole time

I signed up for a 4 hour hands on class at a BBQ joint in Dallas last month for $260 because I wanted to learn fire management on a real offset. We stood around for almost 2 hours while the pitmaster told stories about his catering gigs and never once let us touch the firebox. When we finally got to trim a brisket he did the whole thing himself and we just watched. I learned more from a 20 minute YouTube video the next morning than I did in that whole class. Has anyone found a class where they actually let you run the pit yourself, or is it all just watching some guy talk?
