Shoutout to the old cook who told me to stop plating with tweezers
Three years ago at a spot in Austin I was putting micro greens on everything with tweezers like it was fine dining. A cook with 20 years on me watched me do it for one dinner rush and said 'nobody eats with their eyes closed but nobody eats tweezers either.' Now I just use a spoon and my plates look cleaner, so what made you ditch a technique you used to swear by?
