A line cook at my first real job said my knife work looked like I was mad at the onion
I was 19 and hacking through prep at a spot in Sacramento, and he told me to let the blade do the work instead of my shoulder. Started slowing down and doing 10 minutes of nothing but onions before every shift, and within two weeks my cuts were clean and I stopped going through bandages. Anybody else get one small tip early on that quietly fixed your whole technique?
