Turns out, my impatience was the secret to my flat loaves all along
I used to skip the second rise to save time, but letting it go full term gives my bread the lift and soft crumb I was always missing.

How many times do we mess up the simple stuff because we just can't wait? It's not just bread... I catch myself pulling cookies out early or checking plants every day for growth. There's a quiet kind of magic in letting things take the time they need, but our brains are wired for instant results. We see it everywhere, from not letting soup simmer long enough to skipping steps in a new hobby. Maybe the real skill is noticing that urge to hurry and choosing to ignore it.

Yeah, I get that. My whole life is a series of "don't rush the process" lessons I refuse to learn. Took me years to stop pulling bread early, and I still get yelled at for walking on fresh concrete before it's set.
