Rant: my sister-in-law said my loaves looked like "sad little pillows" at Thanksgiving
We host Thanksgiving every year in Boise, and I had been pretty proud of my bread game until this past November. My sister-in-law picked up one of my loaves, pressed the top, and asked if it was supposed to be that flat and pale. I laughed it off at the time, but I checked my notes the next morning and saw I had been using 2 year old yeast and never once checked my oven temp with a thermometer. I ran to the store that week, grabbed fresh yeast and a $12 oven thermometer, and found my oven actually runs about 40 degrees cool of what the dial says. First batch after that got a real rise and actual color on top, and my husband ate half a loaf before dinner. Now I proof everything on the counter with a bowl over it and bake at 425 instead of the 375 I trusted for years. Has anyone else found their oven was lying to them the entire time?
My oven was running 50 degrees hot for who knows how long and I burned so many batches before I figured it out with a cheap thermometer. Now I check it every few months because those things can drift over time.
