For years I swore by hand kneading until my friend in Chicago made me use her stand mixer last month.

I finally gave in and tried it with my basic white loaf recipe, and the dough was smoother and more elastic after just eight minutes on a low setting, which completely changed my view on using machines for something I always thought had to be done by touch. Has anyone else had a similar switch from hands to a mixer, and did it change your results?

I mean, it's just bread dough, right? My grandma made perfect loaves her whole life just using her hands. A mixer gets it done faster, sure, but is the bread actually that much better? I feel like we overthink this stuff sometimes. It's still just flour and water getting mixed up, whether a machine or your fingers do it.
