Spent 3 hours trying to fix a temperature swing on my offset smoker
Built a fire, got it steady at 250. Walked away for 20 minutes. Came back and it was at 310. Chased that thing around all afternoon. Turned out I had a bad gasket on the firebox door letting in extra air. 3 hours of my life for a 5 dollar fix. Has anyone else had a small leak wreck their whole cook?

See it different. That 3 hours taught you exactly where your weak spot was. You'll never forget to check the gaskets again. Next time something goes sideways you'll know where to look first. That's worth more than the $5 fix. I've spent whole afternoons learning stuff that seemed dumb at the time. Pays off later when you can spot a problem in 5 minutes instead of chasing it for hours.
