Disagree completely, I never weigh my flour and my bread turns out fine every time. Scooping works if you know how to do it right, you just fluff the flour first and use a light hand. A scale is just another gadget taking up space in the kitchen drawer. People baked perfect bread for centuries without digital scales, so what changed? Maybe your neighbor just doesn't know what good sourdough looks like.
