I keep 6 hens in a coop behind my garage in Boise. For about 2 years I cracked eggs into a bowl and fished out that thick white goo around the yolk with a spoon because I figured it was the runny junk. Last Tuesday my neighbor Dana, who has kept birds for 11 years, watched me do it and just stared. She told me that part is the chalaza and it holds the yolk in place, and it is totally fine to eat. I looked it up and felt pretty dumb. Now I scramble all of it and honestly the eggs come out fluffier. So what else am I tossing that I should be keeping?
