My bokashi bin took 6 weeks to finally break down citrus peels

I added a bunch of orange and lemon peels a while back and just assumed it would all break down like usual. Nope... after 6 weeks of waiting I opened it up and found the peels basically still whole and just pickled. Turns out the acidity was too high and I didn't have enough carbon material mixed in. Has anyone else had success with tons of citrus in their compost?

That whole thing reminds me of how we treat problems in general, you know? We figure if something worked before it should work again, no questions asked. But life keeps throwing curveballs like, "oh by the way, citrus is different from banana peels, dummy." It's like how I tried the same drill bit on different materials for years before realizing you gotta swap them out for each job. We just assume one approach fits everything, then get surprised when it doesn't.
